
The glasses are washed again by hand just before filling, so that beer can flow more easily and create a good head of foam, which protects the beer from the oxidation caused by the sudden exposure to air.
To appreciate these beers fully, it is important to wait patiently and lovingly - to allow a good head of foam to form and to let the gas in the beer “explode”, thus releasing excessive fizziness. This “German-style” draught method, which consists in filling the glass in three distinct “shots”, takes about 7 minutes in all. Well-wasted time!
