
The impressive brewing equipment is clearly visible through a large glass window, attracting the attention of customers and making them feel part of the complex process that leads to the production of beer. B63 organises guided tours round the brewery to show how beer is made, with the aim of spreading and providing knowledge of this universe of tastes and fragrances. To build a reliable brewing facility that guaranteed high production levels, flexibility and efficiency, a leading supplier, whose products could be adjusted to satisfy the needs of the most demanding customers, was contacted. A discontinuous cycle brewing system was designed and built. Five hundred litres per production cycle can be obtained. The innovative system is highly automatic. The project is environmentally friendly and designed to keep energy and water consumption low, as well as polluting less than average.
By reducing the amount of fumes two results were achieved (producing warm water at no additional cost and not releasing condensable fumes into the environment). The automatic systems in the cooking area mean recipes can be set and saved in the system, making the cooking process repeatable.
The last elements in the production area are fermentation and maturation vats, as well as special storage tanks that are directly connected to the draught system in the pub. All the above allows B36 to serve a real, unpasteurised craft beer of guaranteed quality.
